A little over a year ago, I was asked if I would contribute to this collaborative cookbook. I was thrilled to have two of my recipes included! The first is one that I created, Pasta with Vegan Cream Sauce (recipe here). The second is a veganized version of my great-grandmother's green bean salad, which my grandmother made often when I was growing up.
The book is full of classic Midwestern dishes made vegan. I particularly love the Dumplings and Gravy and the Hungarian Paprikash.
